Caravans make money based on the trade skill of the companion leading them, but are also a little inconsistent due to also relying partially on world economy. Workshops make money based on two things: supply and demand. If your input is scarce, you make less money, so make sure you have the right villages nearby before setting it up.
Both companions are basically the same shield maiden type. The Galend caravan consistently makes a profit. It varies but there's always something. The Baltakhand has yet to make a profit. I've chased it down and checked on it and it moves around the map just fine buying and selling, but after weeks now it hasn't made a profit.

Playing on realistic. Sitting on 750k with only about 2k income from fiefs, caravans and workshops. You basically buy all your iron ore and hardwood and make two handed swords to start (sell for 2k ish per sword). Later, selling 2h dane axes for like 10k a pop and they only cost around 8 crude iron and like 1 or 2 hardwood.
1.8 changed Party and Army AI to carry a lot more food and something with caravan buying patterns, which resulted in at least two of the dumbest things I've experienced in this game: Workshops that need food (breweries, wineries) never have any because lords and traders are buying everything.
Yeah the economy is not good at all right now. Workshops & caravans could be a lot better and armor prices are off the wall, 30k for something that costs 1k in warband. Those issues will be fixed eventually but for now you just have to either deal with them or download some mods. snipars_exe. Vlandia.
They do make money. A caravan will probably make more than a workshop. But their real value lies in training companions and family members. I do support this. You will need some good companions with tactics, leadership, steward and even scouting to let them run strong parties later on. To prepare this in early game let them run caravans.

It seems to be luck with a small bit in the trade skill. One village raided can jack up the price of an item in a city. One of your carvans gets there first and you make big money. That same caravan may take a loss 3 days in a row if another caravan beats them to it. My spicevendor consistently makes more than my two swifts, even if not by a lot.
